The Gilt Head Sea Bream is a fish with shimmering, silver skin and tender, white flesh. It has a rich, succulent taste, and its bones are small and easily removed, leaving the diner with an appealing, meaty portion on the plate. When grilled or braised, the flesh stays moist because of a layer of fat between the skin and the body. One hundred grams of edible meat contain 113 calories. Its scientific name is Sparus aurata, but it is known in French as Dorade Royale, in Italian as Orata, and in German as Goldbrasse. The Red Drum (Sciaenops ocellatus) is a highly sought game fish. In the wild, the red drum is found from Massachusetts to Key West, Florida where it is known as the channel bass, and from Florida along the Gulf coast to Tuxpan, Mexico. The upper body has a coppery cast, and the upper flank bears one or more black, ocellated spots near the tail. Red drum derive their name both from their color and from a drum-like noise which the males produce during spawning time by vibrating a muscle in their swim bladder.  Red drum is a fast-growing fish, reaching approximately 22 cm. and 450 grams in its first year. The European Seabass (Dicentrarchus labrax) is a silvery, streamlined fish with two dorsal fins, medium-sized pectoral fins and slightly forked caudal fin. Sea bass is found in salty and brackish waters. It prefers rocky or sandy sea-beds. It is extremely tasty, and many expert chefs consider it  to be the "king of fish", with high gastronomic potential. One hundred grams of edible meat contain 98 calories. Its scientific name is Dicenrarchus Labrax, but it is known in French as Bar commun, in Italian as Spigola, and in German as Seebarsch. For availability, please contact us.
